Key Lime Pie

This pie is so quick and easy, your family & friends will never know how little effort you put into it! If you're having a hard time juicing the limes, nuke them in the microwave for a couple seconds to get their juices flowing. A great summertime dessert!

Preparation Time: About 15 minutes for juicing the limes and mixing the ingredients

Ingredients:
8 Key Limes (or 4 regular limes), juiced
1 can sweetened condensed milk
1 tbsp vanilla
8 oz. cream cheese, softened
1 pre-made graham cracker pie crust
Cool Whip/Whip Cream for topping
Lime slices/zest for garnish

Directions:
Mix all ingredients well and pour into pie crust. Refrigerate for 2 hours or overnight. Top with cool whip/whip cream and lime slices or zest for garnish!

  1. cream cheese! of course! That has to be the secret ingredient of the key lime pie at simmons seafood. Interesting that there are no eggs in this recipe, too.

  2. Mom got this recipe from a waitress after we ordered some (my favorite) and they didn't have available. It is fantastic and great tip about nuking the limes. We just let the baby play with them ;)

  3. This is Tom's favorite too! I was excited to get this because I did not want to be slaving away in the kitchen for too long every time he wanted it. Wilma gave me a recipe that would take me hours to do. I will take a mental note of your baby trick when I eventually have one of those hanging around :)
